Gooey Rice

This is was made up, based on ideas from other rice dishes. Adjust or alter recipe to taste. This should be enough for about 2 portions.
  • 25g / 1 oz butter
  • 1 onion, diced small
  • 2 cloves garlic, crushed
  • 1 potato, diced small
  • 1 cup rice
  • 1 vegetable stock cube
  • 2 tablespoons indian garlic pickle
  • 2 tablespoons oriental chilli sauce
  • water
Melt the butter in a large pan, and fry the onions, garlic and potato on a medium high heat until the onions are translucent. Add the stock cube, pickle and chilli sauce to the pan with the rice, stir until the rice is well coated, then add half a cup of water. Stir constantly, and when the rice has absorbed most of the water, or the mixture starts sticking to the pan easily, add another half cup. Keep absorbing and adding water until all the rice is cooked. Evaporate off as much water as you can without the rice sticking and burning, then serve immediately.
