Chicken Bacon and Spinach Soup


Large quantity of healthy soup. Vary dicing according to how chunky you like your soup. Takes me about an hour preparation and cooking time in total.



4 chicken breasts, diced
8 slices bacon, sliced into strips
2 onions, chopped
4 cloves garlic, crushed
2-3 tablespoon sunflower oil
Ground black pepper

4 chicken stock cubes, crumbled
3 pints water, boiling
2 lb / 1 kg new potatoes, diced

8 oz / 250g bag spinach, washed


Put the first block of ingredients in a large pan, and cook over a medium/high heat until chicken is sealed, bacon is cooked and onions are sweated down. Add second group of ingredients, bring to the boil and simmer (with lid on, stirring occasionally) until potatoes are cooked, which could be from 5 to 20 minutes, or more, according to how small they are diced. Add spinach to pan (carefully, since it will take up a lot of room) and stir into soup. Cook for 5-10 minutes more. Serve with fresh sliced bread.
