Meat Loaf


The first block of ingredients here are the ones necessary for two basic meat loaves. The second block are optional extras, which I used when I first cooked this recipe, and are included here as a guide to the versatility of this recipe. The mince can be of any meat, and many other meat loaf recipes say to use half pork and half beef. In case the loaf seems a bit dry when served, provide gravy or similar to help moisten it.


1kg / 2 lb beef mince (or other kinds of meat, if desired)
2 eggs
175g / 6 oz fresh breadcrumbs (4 slices crumbed in a food processor)
1 onion, finely chopped
Ground black pepper

4 finely chopped fresh green chillies
2 tbsp Worcestershire sauce
1 tbsp Soy sauce
4 cloves garlic, crushed
2 tbsp dried oregano


Preheat oven to Gas Mark 4 / 175 degrees C / 350 degrees F. Combine your desired ingredients in a large mixing bowl, probably using your hands, until thoroughly and evenly mixed. Press evenly into greased loaf tin(s) lined with greaseproof paper (for ease of removal) and bake for about 1 hour, until cooked through.
