Makes about 6 pancakes. These can be used as a desert, or rolled up with savoury fillings such as cheese and onion.


Pancakes


1 quantity of batter
oil for frying
lemon/sugar, honey, maple syrup, butter or whatever for topping


Put a little (2 teaspoonsish) oil into a frying pan on a medium high heat and wait for the oil and pan to reach a sufficient temperature (the oil will appear much more runny). Using a scoop of some sort (we use a half cup measure) add a little less than half a cup of batter to the pan and swirl to cover the base. When the pancake mixture is no longer runny (this shouldn't take long) loosen the pancake if necessary, then flip onto the uncooked side for a little while longer. Flip again to check if it's done, then serve with toppings.
