Pizza A La MrTea


This is the recipe I use these days. This is for one 14 inch pizza, but should scale accurately. I will convert the weights to other systems next chance I get. The pizza, once cooked, can be frozen.


For the base:

300g plain flour
1 tbsp caster sugar
a pinch of salt
2 tbsp olive oil
6 fl oz lukewarm water
1 sachet dried yeast
1 tbsp dried oregano
1 tbsp dried basil
1 tbsp garlic granules

For the tomato sauce:

1/2 tin chopped tomatoes
1/4 tube tomato puree
1 tbsp sugar

For the topping:

5 slices german/danish salami
50g pepperoni
2 green chillies, chopped
1/2 onion, diced
4 slices bacon, cut into strips
1 mozzarella cheese, grated or minced
100g cheddar cheese, grated


Preheat the oven to Gas Mark 7 / 225 degrees C / 475 degrees F. Mix all the dough ingredients in a mixing bowl. Knead until dough is smooth and elastic, then cover bowl with a damped teatowel. Put the tomato sauce ingredients into a pan and heat gently, but do not allow to boil, and reduce until the mixture has thickened a bit. (Sorry to be vague, it doesn't matter that much.) In another pan heat the onion, bacon and chilli until cooked.

After the dough has been left for an hour, knock it back and shape it as required, putting it onto a greased tray, and leave it for 10 minutes or so to rise a little. Next spread the base with a thin layer of the tomato sauce. Next put on the bacon, onion and chilli. Cut the salami into quarters and place half of it onto the base. Put half of the pepperoni onto the base. Sprinkle the cheeses over then put the remaining pepperoni and salami on the top. Bake for 15-25 minutes (depending on your oven) until the edges of the base have browned slightly.
