Special Bolognese
This is the recipe generally used by the FiveGeeks household for bolognese, suitable for serving with pasta, or usage in recipes such as lasagne.
Put a little olive oil in a large pan on a medium high heat. Slice the bacon into strips. Finely chop the onions and place them into the pan with the bacon. Crush the garlic into the pan, add the mince and crumble in the stock cubes. Cook this combination until the mince has browned, the bacon is cooked and the onions are softer. Add the wine and stir (the pan might need deglazing), then when it starts to boil reduce the heat to medium and add the tomatoes, and add the herbs and pepper to taste. Simmer for about half an hour, stirring occasionally. Serve with spaghetti or some other pasta, and top with cheese.
- 1kg / 2 lb beef mince
- 2 beef stock cubes
- 2 onions
- 6 cloves of garlic
- 8 slices of bacon
- about 2 glasses red wine
- 2 tins chopped tomatoes
- 2 tablespoons tomato puree
- 50g / 2 oz sun-dried tomatoes
- Oregano
- Basil
- Olive Oil
- Ground Black Pepper
