Seasoned Low Fat Chips

This recipe was adapted from low fat chips, which can be a little uninteresting, and I felt could use some spicing up. This makes a very generous portion for one.

3 medium potatoes
1/2 tsp salt

For Cajun style:
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp ginger powder
1/2 tsp cayenne pepper
ground black pepper
a pinch of dried thyme
a pinch of ground cumin
a pinch of dried oregano
a pinch of dried sage

For Italian style:
1 tsp garlic powder
1 1/2 tsp dried oregano
1/2 tsp dried basil
ground black pepper

For Indian style:
3 tsp tikka curry powder

Well, you get the picture...

Wash the potatoes. Cut them into approximately 1cm / 1/4 inch square chips. Put chips into a pan of boiling water and boil for 5 minutes or so until soft. Drain off chips. Return chips to empty dry pan, sprinkle over half seasoning of choice, put a lid on it and shake the chips. Add the rest of the seasoning and repeat. Preheat oven to Gas Mark 6 / 200 degrees C / 400 degrees F. Place chips in a non-stick baking tray, and cook for about 10 minutes or until slightly darkened, turning occasionally to cook evenly and minimise sticking.
